Low Calorie Blueberry Muffins!

After spending time at the Yelton Manor B & B last week, I really got use to enjoying fresh baked and healthy muffins for breakfast. So I decided to make some low calorie Blueberry Muffins.
Low Calorie Blueberry Muffins
Delicious and here is the recipe!
These muffins are easy to make and are perfect for a quick and healthy breakfast

Ingredients:
  • 1 1/2 cups low-fat buttermilk
  • 1 cup oats
  • 2 Tbsp canola oil
  • 1 large egg
  • 1 tsp vanilla
  • 1 cup whole wheat flour
  • 1/3 cup sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup fresh blueberries

Preparation:

1. Preheat the oven to 350°F
2. Combine the first 5 ingredients (through vanilla) in a large bowl. Allow to soak for 5 minutes. In another bowl, combine the flour, sugar, baking powder, and salt. Add the buttermilk mixture to the flour mixture, and stir well. Fold in the blueberries.
Spray 12 muffin tins with non-stick cooking spray, and fill 2/3 full with the batter.
3. Bake for 20-25 minutes, or until a toothpick inserted in the middle of one of the muffins comes out clean.

  1. Oh YUM! That is my kind of snack!
I don't have any lo-cal recipes to share, unfortunately. We seem to go for the hi-cal versions of everything.
